Monster sweet potato

Instead of boiling that big old sweet potato and having a soft mashed sweet potato, you
could try making baked sweet potato fries. All you need to do is:
Turn your oven on to 425
degrees, rack in the middle of the oven.
Wash and dry the potato and
peel it if you wish, or you can make them with the skin on.
Cut the potato into fry
size wedges. (This is the hard part as sweet potatoes are hard when raw. If it
is long, it is easier to do if you cut it lengthwise into 2 or 3 sections. Then
cut each section into half and then cut each half section into approx half inch
wedges.)
Put the fries on a cookie
sheet (non-stick is good) with some oil of your choice (Canola, Olive, etc) and
toss them to coat them all over with the oil.
Then season them. I use sea
salt, lemon pepper and a rosemary mix. (Mrs Dash is a
good alternate) Toss them again to spread the seasoning around again.
Bake approx 10-15 minutes,
depending on the size of the fry.
Turn over and brown other
side and continue baking until done to your choice of brown and crispiness. (Another 10-15 minutes max usually)
Be sure to keep track of
the time because black fries don’t taste too good. (Just ask my husband about
that when he tried to re-heat some left over from the night before.)
I serve them with a dipping
sauce of mayo, siracha, lemon
juice & garlic powder. Delicious.
